This week I’d like to share one of my favourite winter warming recipes with you.

Full of nutritional goodness including vitamin C, B’s, calcium and high in fibre this soup is super easy to make and is sure to become a household favourite.

Cauliflower & Tahini Soup

600g cauliflower roughly chopped

1.5 L boiling chicken or vegetable stock

2 teaspoons olive oil

1 small onion, finely chopped

3 tablespoons tahini

¼ teaspoon ground cumin

Natural yogurt

Simmer cauliflower in stock for 10-12 mins. Heat oil in frying pan over medium heat. Add onion and cook for 3 mins. Add onion to cauliflower soup and cook for further 2-3 mins. In blender combine soup, tahini and cumin, blend until smooth. Reheat soup in saucepan, season to taste. Serve with a swirl of yogurt.
